The important thing to look for is "common ground". Which precludes attempts to "convert" the other. Each must do their OWN conversion. It may take the form of "assimilation", or it may take the form of "standing out" or "making a statement". Hopefully, our consciences are all being made more open to the Creator's ways of thinking, and more closed to Satan's. Hopefully, we are each becoming better listeners in the process.

even in congregation sanctioned duties.. so, why, then, do so many service pairings involve just that: a brother alone in the territory (even if it's to make a call) with a sister he's not married to?.

There is also something else to be factored in: that is that sometimes a scalp can be so sensitive that nothing can be put on it, because it need air to heal, etc. In those kind of cases, a statement may be mentioned acknowledging the "head covering" issue each time, and it would suffice as long as it is done respectfully.
